• PREP AND BAKE: Carbon steel supports steady heating, while the nonstick surface helps reduce sticking. Add a liner, use the silicone spatula to mix or spread batter, and use the pastry brush to apply butter, oil or glaze. Bake the pans in a conventional oven up to 445°F (230°C).
• REDUCE LEAKS: The tight-fitting removable base helps limit seepage with standard cake and cheesecake batters. For thin mixtures or water baths, wrap the outside with foil and set the pan inside a separate outer pan.
• COOL AND RELEASE: Let the dessert cool, loosen the edge with a silicone or plastic tool, open the spring lock and lift away the sidewall. The removable bottom helps move cheesecakes, mousses, quiches and layered desserts without flipping.
• CLEAN AND RESET: Hand wash cooled pans with a soft sponge, then dry seams and edges. To reassemble, place the base flat in the bottom groove, wrap the sidewall around it and close the latch; avoid soaking, abrasive cleaners and metal utensils.
